Butternut Squash Baked Pasta

- ½ cup hazelnuts
- 4 tablespoons olive oil
- 1 large onion (chopped)
- 3 cloves of garlic (minced)
- ½ teaspoon crushed red chili flakes
- 1 small butternut squash, peeled, halved, seeded, cut into ½-inch cubes (about 7 cups)
- 4 cups low-sodium chicken stock
- 1 pound rigatoni or paccheri
- salt
- 2 ounces Parmesan, grated (about 2 cups), may require more per serving
- 1 cup basil leaves

preparation
1. First, preheat the oven to 350°. Toast the hazelnuts on a baking sheet pan until golden brown, about 6-8 minutes. When cool, then finely chop and transfer to a medium bowl and stir in 2 Tbsp. Then set the oil aside.
2. Heat the remaining 2 tablespoons of oil in a medium pot over medium heat and cook the onion. Stir occasionally for about 10 minutes until golden brown in color and soft. Add garlic and red chilies and cook and stir until fragrant and garlic softens. Next, add the squash and then the stock
Reduce heat to medium-low. Now boil the squash for 12-15 minutes until tender. Now let it cool a little.
3. Now cook the pasta in a pot of boiling salted water, occasionally stirring, for about 3 minutes less. Now remove from heat and rinse with cold water.

4. Blend the squash mixture in a blender until smooth. Add 1 cup Parmesan and puree with salt।
5. Pour ½ cup squash puree into a 13x9" baking dish and spread to all sides. Now spread pasta over sauce. Pour in the rest of the sauce. Then top with ½ cup Parmesan, cover with foil, and bake for about 15 minutes. Increase the oven temperature to 425 and continue baking until the sauce bubbles at 15 minutes.
